做(zuò )法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅盖大(dà )火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
